Cake

  • 2 cups granulated sugar
  • 2 cups all-purpose flour
  • 1 teaspoon allspice
  • 2 teaspoons cinnamon
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • cups vegetable oil
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 3 cups grated carrots

Cream Cheese Icing

  • 2 cups powdered sugar
  • 8 tablespoons butter (softened)
  • 8 ounces cream cheese (softened)
  • 1 teaspoon vanilla extract

Instructions

Cake

  • Preheat the oven to 350°.
  • Combine all dry ingredients.
  • Add oil and vanilla, then add eggs, one at a time mixing after each addition.
  • Stir in grated carrots.
  • Pour into prepared pan and bake on center rack of the preheated oven for approximately 35 minutes or until a toothpick inserted into the center comes out mostly clean.
  • Cool completely on wire rack.

Icing

  • Add all icing ingredients into electric mixer and mix until thoroughly combined and fluffy.
  • Ice top of cooled cake.
