  • 1 Bay leaf

  • 3-4 lbs chuck roast
  • ½ cup chopped pepperoncini – the perfect ingredient to add zestiness
  • ¼ cup pepperoncini juice

Instructions to Make Italian Beef in Your Instant Pot

  1. Combine beef broth, salt, pepper, Italian seasoning, diced onion, parsley, garlic powder, Bay leaf, and Italian salad dressing mix.
  2. Put the roast in the instant pot.
  3. Pour mixture over top of the roast.
  4. Add chopped pepperoncini and liquid over roast
  5. Cover and cook on low for approximately 10 hours or until pull=apart tender.
  6. When done take out the Bay leaf.
  7. Shred meat with two forks
  8. Serve topped with mozzarella cheese and extra peppers if desired.

The Good Season’s dry salad dressing mix, as recommended in this recipe, is not gluten-free. Check the ingredients list on the dry Italian salad dressing package or make your own. 

What can I use instead of Good Season’s dry Italian dressing mix to make this Italian chuck roast gluten-free?

You can use any homemade seasonings/dressing mix, but check the salt content of your recipe. You may need to cut the salt called for in this recipe to ½ teaspoon.

 Is a chuck roast the only cut of meat you can use for Instant Pot Italian beef?

If you don’t have a chuck roast on hand, bottom round, top round, or top sirloin can work, but for Instant Pot Italian beef, the best meat cuts are well-marbled and fatty. 

For even better results, if you don’t have a chuck roast for your slow cooker, Italian beef, brisket, or stew beef are recommended over the leaner cuts of meat just listed. You can also use meat off the bone. 

How do I know if this Instant Pot Italian Beef is done enough? 

It should be fork-tender and shred easily. If not, return to your instant pot and repeat the cooking in 5 minute increments until tender.

Can I substitute yellow banana peppers for pepperoncinis in Italian chuck roast?

The general consensus is yes, but you will typically lose the “tang” the pepperoncini will give you in the recipe. 

Although many people think these two peppers are one and the same, they are not.  Banana peppers are a bit lower on the heat level than the pepperoncini and tend to be a bit sweeter. We recommend you try with the pepper you have on hand and switch up the next time.  Let your taste buds be the tie-breaker in your home!
