This delicious Instant Pot Buffalo Chicken Soup recipe is made with boneless chicken breasts, blue cheese, sharp cheddar and Frank’s RedHot sauce. Perfect choice for when you don’t want to make the trip to the drive thru for wings and deal with the messy bones. Besides being super easy to make in your electric pressure cooker, this simple dinner idea is also loaded with protein! It is a great idea for a quick, nutritious dinner on a chilly night.

Why Cook In The Instant Pot

The Instant Pot is a multi-functional electric pressure cooker that’s designed to make cooking easy, fast, nutritious and fun. This countertop appliance is similar to a slow cooker, but the Instant Pot has the ability to sauté, boil, and make yogurt (which the slow cooker can’t do). The Instant Pot comes with a stainless steel cooking pot, a steam tray, a condensation collector and a stainless steel lid that has a pressure release valve. The Instant Pot also allows you to program the cooking time, temperature and pressure level of each function. You can also delay the start time and set the keep warm function.

Substitutions and Additions

  • Sprinkle the bowls of soup with crumbled blue cheese for an authentic wing flavor. Or, for a stronger flavor use Gorgonzola Cheese.
  • To add to the authenticity, I added carrots and celery to the recipe (since wings are usually served with these items) but you can also top each bowl of soup with diced celery and carrots for a bit of crunch if you like. And, definitely include celery sticks on the side.
  • Drizzle some ranch or blue cheese dressing on the servings of soup.
  • Serve with a dollop of sour cream and chopped tomatoes.
  • Top with Croutons.

Ingredients for Instant Pot Buffalo Chicken Soup (measurements in recipe card below.)

  • Butter – Real butter adds more flavor.
  • Onion Diced – I like to use a sweet onion, such as Vidalia
  • Baby carrots – Can use regular carrots but I think the baby carrots tend to be sweeter. 
  • Celery Diced
  • Garlic powder
  • Thyme – The recipe uses dried thyme but if you have fresh, you can use that but make sure to adjust to taste. Fresh herbs require more since they are not concentrated.
  • Red pepper flakes – Feel free to adjust the amount according to your heat tolerance.
  • Chicken Diced – I usually use chicken breasts but thighs will work as well.
  • Hot sauce – Again, adjust the amount to your liking.
  • Half and half – You can use regular milk but the soup will not be as rich tasting.
  • Chicken stock – I use low sodium and then I can add salt as needed.
  • Dry ranch dressing
  • All-purpose flour
  • Cream cheese – Use the full-fat variety if you want your soup rich and creamy.

How to Make Rich and Creamy Instant Pot Buffalo Chicken Soup (instructions in recipe card below.)

Let soup come to a boil and whisk in flour. Put lid on instant pot and manually set to cook for 10 minutes. Let instant pot release naturally for 10 minutes and then release manually.

What chicken should be used in this soup?

You can use either chicken breasts or thighs. You could even use precooked rotisserie chicken if you like.

Can I use low fat products such as low or no fat cream cheese or regular milk?

You could use low or no fat cream cheese and milk but the soup will not be as rich tasting.

Can this soup be made in the slow cooker or on the stovetop?

Yes, you can. You will basically follow the same recipe but cook for longer times, particularly if using the raw chicken.

Ingredients

  • 8 tbsp Butter
  • 1 Medium Onion Diced
  • 3 Cups Baby carrots Cut into 1/2” discs
  • 3 Cups Celery Diced
  • 1 teaspoon Garlic powder
  • 1 teaspoon Thyme
  • 1/2 teaspoon Red pepper flakes
  • 4 Cups Chicken Diced
  • 1 ½ Cups Hot sauce
  • 1 Cup Half and half
  • 64 oz Chicken stock
  • 2 pkg Dry ranch dressing
  • 1/2 Cup All-purpose flour
  • 8 ounces Cream cheese

Instructions

  • Melt 1 stick (8tbsp) of butter in Instant Pot.
  • Once the butter has melted add the onions, celery and carrots. Sauté until they begin to soften.
  • Add the garlic powder, thyme and red pepper flakes. Cook for approximately 2 minutes.
  • Add the diced chicken, hot sauce, half and half, chicken stock and 2 packs of dry ranch dressing.
  • Let soup come to a boil and whisk in flour.
  • Put lid on instant pot and manually set to cook for 10 minutes. Let instant pot release naturally for 10 minutes and then release manually.
  • Take lid off instant pot and add cream cheese. Stir until combined. Place lid back on and pressure cook for 1 minute.
