How to Make Oatmeal Pumpkin Whoopie Pies

1 & 2 Combine flour, oatmeal, baking powder, baking soda, cornstarch and all dry spices. Set aside.
 
3 In a separate large bowl, combine butter and brown sugar with an electric mixer on high speed until creamy.
 
4 Add in eggs, one at a time, mixing after each addition.making oatmeal whoopie pies
 
5 Mix in vanilla extract. Add the dry ingredients and the pumpkin into the wet ingredients.
 
6 Mix until thoroughly combined.
 
7 Place rounded tablespoonfuls of cookie batter, two inches apart on the baking sheet. Flatten the cookie slightly with a drinking glass or the bottom of your measuring cup.

  • 1 c butter (room temperature)
  • 2 c light brown sugar (packed)
  • 2 lg eggs (room temperature)
  • 1 tsp vanilla extract
  • 2 c all-purpose flour
  • c uncooked oatmeal
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cornstarch
  • ½ tsp pumpkin pie spice
  • ½ tsp ground nutmeg
  • 1 tsp ground cinnamon
