Ingredients for Cappuccino Muffinsmuffin ingredients

  • 2 cups all-purpose flour
  • 3/4 cup sugar
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/8 tsp cinnamon
  • 2 tbsp cocoa powder
  • 1 cup buttermilk
  • 2 1/2 tbsp instant coffee powder
  • 1 beaten egg
  • 1/2 cup melted butter
  • 1 tsp vanilla
  • 3/4 cup chocolate chips (dark or milk chocolate)

Are Substitutions Allowed In This Recipe For Cappuccino Muffins?

If you choose, some items in this recipe may be exchanged.  The buttermilk can be substituted with whole milk or 2 percent but the buttermilk definitely makes them moister.

Any type of chocolate chips can be used; dark, milk, full size or mini, according to preference.

You can use more or less of the coffee powder.  The amount in the recipe makes a strong coffee flavor muffin.  If you like a strong coffee taste, use the amount in the recipe.  I gave some of these muffins to my adult daughter and she said they were a bit too coffee flavored for her taste.  She drinks her coffee heavily flavored with milk and sugared flavorings.  My grandson, on the other hand, loves his coffee strong and without any sugared flavors.  He loved these muffins as is!

How To Make Cappuccino Muffins With Chocolate Chips

  • Combine first 6 ingredients in a large bowl.
  • In a separate bowl, mix together the egg, buttermilk, and coffee.  Add to the flour mixture and stir well.  Stir in the butter and vanilla and mix till combined.  Add in chocolate chips.
  • Grease muffin pan or use a non-stick spray.  You may also choose to use paper cupcake liners instead.
  • Spoon batter in the pan, filling each cup about 3/4 full.

Bake in preheated 375-degree oven for approximately 18-20 minutes.  They will be done when a toothpick inserted in center of a muffin comes out clean.

Ingredients

  • 2 cups all-purpose flour

  • 3/4 cup sugar
  • 1/2 tsp salt

  • 1 egg (beaten)
  • 1/2 cup butter (melted)
  • 1 tsp vanilla
  • 3/4 cup semi-sweet chocolate chips

Instructions

  • Preheat oven to 375 degrees.
  • Prepare a muffin tin by spraying with non-stick spray or line with paper cupcake liners. Set aside.
  • Combine the first six ingredients in a mixing bowl.
  • In a separate bowl, mix together coffee, buttermilk, egg, butter and vanilla. Add to flour mixture and stir together.
  • Add chocolate chips and mix well.
  • Spoon the muffin batter into muffin tin, filling about 2/3 full.
  • Bake on center rack of oven approx. 20 minutes. Depending on your oven, time may be plus or minus this amount. Start checking muffins at 17 minutes by inserting a toothpick into the center of a muffin. They are done when the toothpick comes out clean.
  • Cool in pan for 5 minutes, then remove muffins to a wire rack to continue to cool.
