Variations for the Best Tasting Ham and Potato Soup
There are lots of ways you can tweak this ham and potato soup recipe to make it just the way you like it. You can add more spices or even a little bit of heat with a jalapeno or red pepper flakes.
You can switch up the type of potatoes you use. I used red potatoes but you can try Yukon Gold, Russets or even sweet potatoes.
Try adding in different vegetables, such as celery or cabbage.
How to make Cheesy Ham and Potato Soup

- Melt 2 tbsp butter on saute setting in instant pot.
- Add onions and saute until tender.
- Add additional 8 tbsp butter and allow to melt.
- Whisk cornstarch into milk. Pour milk into onion mixture and stir. Add chicken broth and half and half into pot.
- Add carrots, potatoes, ham, garlic powder and pepper
- Put lid on instant pot and secure according to your instructions. Set at high pressure for 6 minutes.
- When time is up quick-release pressure and remove the lid.
- Slowly stir in sour cream until combined. Slowly stir in cheese until combined.
- Serve with extra garnishes on top if desired.

How to Store This Creamy Soup
Instant Pot Ham and potato soup is a great meal to make on a weekend to have on hand during the week. You can either make it fresh and store it in the fridge for about 5 days. If you’re storing it in the fridge, let it cool down to room temperature, then put the leftovers in a sealed container. I don’t recommend freezing this soup because freezing will cause it to have a grainy texture.

- 8 cups chicken broth
- 2 cups half and half
- 5 cups red potatoes (cubed)
- 3 cups ham (cubed)
- 2 c baby carrots (sliced)
- 2 tsp garlic powder
- 1/2 tsp pepper
- 3 cups sharp cheddar cheese (shredded)
- 1 1/2 cups sour cream
