  • Butter – Combine your graham crackers with melted butter and a bit of sugar to create a sweet and flavorful crust for the brownies.
  • Milk Chocolate – Use roughly eight ounces of milk chocolate for this recipe. You can also use semi-sweet chocolate, depending on your preference.
  • Marshmallows – Use 20-25 large marshmallows in this recipe to add that sweet marshmallow flavoring to your brownies. You can use mini marshmallows. Marshmallow fluff will also work.

S’mores Brownies Recipe Notes

  • Use a food processor to crush your graham crackers into crumbs to prepare the perfect crust. If you don’t have a food processor, you can always use a blender to get the job done.
  • Be sure to grease your baking pan before adding your crust or brownie ingredients. Greasing the pan keeps the brownies from getting stuck to the bottom of it.
  • When slicing your brownies, it’s best to use a hot knife, which will make it easier for you to cut through the marshmallows. Simply dip your knife into a glass of very hot water, then dry with a towel before slicing.

How to Store S’mores Brownies

These marshmallow covered fudgey brownies can be stored covered in your refrigerator for about three days. I don’t recommend freezing the brownies because the marshmallows will not do well.

Can I use cookies to create the crust instead of graham crackers?

Absolutely. If you prefer using cookies, simply toss them into your food processor to create that crumb-like consistency before combining them with your butter and sugar. Or use chocolate or cinnamon flavored graham crackers.

How do I store these brownies?

Allow your brownies to cool down completely, and then slice into them with a hot knife. You can wrap them individually in plastic wrap and place them in a food storage container, storing them on your countertop or in the fridge, whichever you prefer.

  • 6 whole graham crackers
  • 3 tablespoons butter melted
  • ¼ teaspoon salt

  • 8 ounces milk or semi-sweet chocolate can use chips or bar
  • 6 tablespoons butter
  • 2 eggs
  • ¼ cup granulated sugar
  • ¼ cup flour
  • ¼ teaspoon salt
  • 4 ounces mini chocolate chips or bar chopped into small pieces
  • 20-25 large marshmallows
  • 1 ounces grated chocolate optional for garnish

  • Preheat the oven to 325 degrees.
  • In a small food processor, place all of thegraham crackers and the salt and pulse until it is small crumbs. Pour in the melted butter and pulse until it looks like wet sand.
  • Press firmly into an 8” x 8” x 2” well-greased baking pan to create an even layer. Bake for 7 minutes and cool completely before adding brownie mix.
  • In a saucepan, place butter and 8 oz of chocolate over low heat and stir until completely melted. (Watch closely as chocolate can burn quickly.) Once melted, set aside and allow to cool.
  • In a small bowl, whisk together sugar and eggs.
  • Once chocolate is cooled, pour into sugar and egg mixture and whisk until incorporated.
Gently fold in flour and salt until well combined. Add in the 4 oz of chocolate chips or bits and stir until all the ingredients are mixed.
  • Pour over the graham cracker crust and place in the oven to bake for 22-25 minutes, or until a toothpick comes out clean.
  • While the brownies bake, cut each marshmallow in half, lengthwise.
  • Once the brownies are cooked, place the cutside of the marshmallows down on top, covering the entire pan.
  • Turn the oven to broil and place the pan back into the oven for about 2 minutes, until the marshmallows turn golden. **Do not leave unattended as they can turn very quickly and burn!!
  • Allow to cool slightly before serving, as brownies are best when eaten when the marshmallows are warm. Garnish with grated chocolate if so desired.

To get a clean cut, use a very hot knife to slice through marshmallows. It may be helpful to have a cup of boiling water at hand to continually dip the knife into after each cut.
