Crust
- 6 whole graham crackers
- 3 tablespoons butter melted
- ¼ teaspoon salt
Brownies
- 8 ounces milk or semi-sweet chocolate can use chips or bar
- 6 tablespoons butter
- 2 eggs
- ¼ cup granulated sugar
- ¼ cup flour
- ¼ teaspoon salt
- 4 ounces mini chocolate chips or bar chopped into small pieces
- 20-25 large marshmallows
- 1 ounces grated chocolate optional for garnish
Instructions
- Preheat the oven to 325 degrees.
- In a small food processor, place all of thegraham crackers and the salt and pulse until it is small crumbs. Pour in the melted butter and pulse until it looks like wet sand.
- Press firmly into an 8” x 8” x 2” well-greased baking pan to create an even layer. Bake for 7 minutes and cool completely before adding brownie mix.
- In a saucepan, place butter and 8 oz of chocolate over low heat and stir until completely melted. (Watch closely as chocolate can burn quickly.) Once melted, set aside and allow to cool.
- In a small bowl, whisk together sugar and eggs.
- Once chocolate is cooled, pour into sugar and egg mixture and whisk until incorporated. Gently fold in flour and salt until well combined. Add in the 4 oz of chocolate chips or bits and stir until all the ingredients are mixed.
- Pour over the graham cracker crust and place in the oven to bake for 22-25 minutes, or until a toothpick comes out clean.
- While the brownies bake, cut each marshmallow in half, lengthwise.
- Once the brownies are cooked, place the cutside of the marshmallows down on top, covering the entire pan.
- Turn the oven to broil and place the pan back into the oven for about 2 minutes, until the marshmallows turn golden. **Do not leave unattended as they can turn very quickly and burn!!
- Allow to cool slightly before serving, as brownies are best when eaten when the marshmallows are warm. Garnish with grated chocolate if so desired.
